All Shucked and Ready to Go!


 
While you are out and about picking up last minute items
for Christmas, swing by Burchmart
(Hollywood, Leonardtown, or Korner Karryout only) 
for oysters at $22 per quart.
Supplies are limited, so don't delay!
 
Oysters are a perfect addition to the holiday meal! What began as an oyster stew tradition at our house every Christmas Eve, eventually became an oyster chowder tradition, heavy on the Old Bay. Perhaps you have a similar tradition or have decided you like the idea of beginning this tradition for Christmas 2012. Enjoy!
 
Oyster Chowder
 
4 medium potatoes, diced
2 carrots, chopped
4 stalks celery, chopped
2 quarts milk
2 tablespoons chopped onion
salt & fresh ground black pepper
4 tablespoons flour
12 tablespoons butter
1 quart oysters
2 tablespoons chopped parsley
 
In a large saucepan, boil potatoes, carrots, and celery in a small amount of boiling water until tender. Drain. Add the milk, onion, salt and pepper and bring to boil.
 
Cream the flour with four tablespoons of the butter and gradually add to the boiling mixture. Cook, stirring, until thickened.
 
Cook the oysters with their liquid in the remaining butter until the edges curl. Add to the soup and serve immediately sprinkled with parsley. Old Bay to taste :)
